Spring Inspired Healthy Carb Loading Recipes

spring inspired healthy carb loading recipes

Back in the Fall, I shared a great round up of Fall Inspired Carb Loading Recipes in honor of the Fall race season so it was only fitting that I do the same for Spring race season now too!

While I was just saying yesterday that no way will I start experimenting with new foods before a race, it’s always good to have some new and tasty recipes using the foods we runners already eat on a regular basis. We may get bored with our plain old oatmeal and banana so why not try using our runner-friendly staples another way, especially this time of year when we are feeling the bright, sunny and fresh air of Spring.

I hope you find a fresh new recipe here that you get excited about while fueling your muscles in a healthy and satisfying way. Have a good weekend!

Hi! I'm Meredith. Join me while I run and cook my way through single motherhood. It is always an adventure trying to teach my 12 year old son the benefits of an active lifestyle combined with healthy eating while of course, still leaving room for dessert.

  1. I’m starving now looking at these recipes! Thanks for linking to my bread, I need some overripe bananas in my life right now 🙂 This weekend is busy – Sat is Drew’s birthday and we’re going to a bar mitzvah, plus another birthday party and girls dance performance Sunday!

  2. Yum, these look so good! I feel like I almost always make my oatmeal the same–brown rice protein powder, cocoa powder, cinnamon, and some sort of almond butter. It’s just so good! This weekend I’m doing a long run of 10-11 miles, then watching playoff hockey!

  3. This post comes at a perfect time! It’s carb-loading day for us as we’re running the BMO Vancouver marathon tomorrow. Wahoooo!

  4. Definitely checking out that oatmeal link! It’s always nice to have some different flavour options for something you eat everyday  And this weekend is going to involve a lot of kitchening for me, I think. I keep telling myself one more month and I’ll be free 😆

  5. Recipes look great!

Three things I’m doing this weekend:
    1. 13.1 miles – Done!
    2. Going to the annual French Market this afternoon! Free tastings all day 🙂
    3. Lots of cleaning and laundry because I woke up to a very sick puppy this morning!
