I thought who I was heading to Trader Joe’s yesterday morning at 8:00 am in my attempt to beat the blizzard crazy crowds only to find out that my Trader Joe’s opens at 9:00 am NOT 8:00 am.

No problem though, I drove across the street to ShopRite where I had some shopping to do anyway.

  • Martin’s Whole Wheat Potato Bread < – because my child has decided Ezekiel Bread is for losers
  • Tropicana Orange Juice and Fruit Punch
  • Frozen Vegetables
  • Plantains
  • Red Sweet Potatoes
  • Bagels
  • FRESH Blueberries < – Highlight of my week!
  • Ellio’s Pizza

If you didn’t grow up on Ellio’s pizza then you totally missed out on a yummy (and processed) childhood. I decided to be a cool mom by getting something fun to eat during the blizzard so Ellio’s, the frozen pizza of my youth, was my choice. Turns out, it isn’t as bad as I thought when I read the ingredients.

I also stocked up on the red sweet potatoes (aside from color, the red, white and Japanese sweet potatoes all seem the same to me) and some plantains!

I made sure to text Michele immediately since she is the queen of cooking plantains figuring she would tell me what I should do with them first.

After chatting, Trader Joe’s was finally open for business.

I was so excited to see giant cauliflowers in stock! They haven’t had cauliflower in forever.

So, since we are expecting a blizzard (which obviously means I am not running the half marathon on Sunday), I plan to be snowed in and busy in the kitchen. I love to bake during a storm but will probably cook some stuff too!

I am considering the follow recipes for dinner over the weekend and Monday:

Beef Taco Bowls < – my son loved this when I made it and asked that I make it again

Beyond Monday, the rest of the week may look like this:

Tuesday – Pizza Night

Wednesday – out for dinner

Thursday – From the Freezer (veggie burgers, meatless meatballs or chicken nuggets for my son)

Friday – out for dinner

What I may bake:

Doughy Peanut Butter Cookies  – A no bake recipe actually!

Banana Chocolate Chip Cookies – I have a lot of bananas at the moment and always think about this cookie recipe I developed a few months ago.

Clean & Fudgy Dark Frosted Chocolate Brownies 

Healthier Granola Cookie Wedges

  1. It used to be hilarious to watch people in Atlanta prepare for “Blizzards” (we are talking 1-2? inches of snow?). But then again, there was that time when we actually did have a blizzard, and then we were all very sorry indeed.
    Here, you more just have to be prepared for delayed deliveries, but in the city it is rare for the power to go out, so you have more freedom.

  2. Totally grew up on Ellio’s! Such a staple in the freezer along with frozen waffles and hot pockets 🙂 Love the text and the fact that you bought plantains! I also did my shopping yesterday, but last night my daughter came down with a stomach virus so I’m not sure any of us will be eating over the next few days. Nope this race was not meant to happen! Crossing fingers we don’t all catch it.

  3. I’ve never heard of Ellios before! I’m not a big pizza person (too much frozen pizza growing up). Dan loves his DiGiorno’s though. I love how you just told Michele that you bought plantains and she immediately gives you a recipe. That’s so funny, and sounds delicious too!

  4. I don’t know how bad we’ll get hit in Upstate NY but I’ll be praying for those racers for sure! Three things I am doing this weekend include working, updating my blog header and eating a lot of bananas $0.29 a pound at Aldi’s meant I went crazy hahaha
    I hope you don’t get too much snow, but thank God for treadmills!

  5. Haha! I was going to ask you if you told Michele that you got plantains – she’s the first person that comes to my mind as well. And no blizzard for us up here in Canadaland this weekend, but I’ll probably be spending a lot of it in the kitchen as well since I kind of have a boatload of stuff to catch up/get ahead on. Hopefully you guys don’t get dumped on too bad!

  6. Stay safe and warm in that blizzard! Thank goodness for treadmills and baking, right? It snowed a lot in the mountains and the passes are closed, so we’re staying in Seattle this weekend and maybe trying trail running if Ryan’s cold goes away.

  7. I’m in D.C. so we’re expecting 20-30 inches of snow–crazy! Everyone here is going nuts. I had a scheduled 7 miler Saturday, but I switched it up and did it today on the treadmill and will rest tomorrow. I loved Ellio’s and Celeste frozen pizzas when I was a kid, I totally should’ve picked some up at the store for this weekend! Fail.

    I’m supposed to fly to D.C. Sunday night for a week of training at my new job … Already got notifications that flights will likely be cancelled. I lived in D.C. for 5 years and the entire city shuts down with a little flurry … This is gonna be nuts!

  9. Despite not having the same weather forecast as you, I stocked up some produce yesterday myself. $20 plus dollars worth of fruit later….which will only last a week or so the way I’m consuming it….it just feels good to have delicious fruits and veggies in the fridge again.

    I was shocked to realize Lay’s potato chips have a decent ingredient list too: potatoes, oil, salt. Color me happy.

  10. Scary weather! Hope you guys are surviving ok there 🙂 Baking and cooking delicious things like brownies and sticky sesame cauliflower is a pretty good consolation prize it has to be said. Have fun!
