I had the grand idea in my head to write today’s What I Ate Wednesday post in the traditional format by sharing one full day of meals. Well, that plan quickly went out the window simply because I kept forgetting to take pictures of breakfast.
Remember the other grand idea that I had last week? When I had said that I would make my black bean and quinoa chili? Well, that didn’t happen either. In my defense, when it came time to make the chili (which I planned to do on Sunday), I wasn’t really in the mood for it.
Instead, I made a box of Banza Mac & Cheese. That sounded like a good idea.
I ran into one of my friends at Mario’s while picking up pizza a few days ago. It was really funny because somehow I recognized her, even with her mask on. It isn’t always easy to see who people are with masks on, especially in the winter when we are completely bundled up. I told her that I recognized her hair.
Isn’t it strange to run into people these days? Not only do you question if it’s them, but it’s also just an odd experience to see people you know and talk to them.
Of interest: One of the last times I wrote a more traditional What I Ate Wednesday post was also the first time I ever tried the whole wheat margarita pizza.
I’ve been back on a hummus kick lately (thanks to enjoying the three-layer hummus from Trader Joe’s) so I definitely felt like a stop at Wild Fig for lunch over the weekend.
I LOVE Wild Fig’s lentil salad. When picking my salad ingredients, I made sure to include the lentil salad in my creation.
I should try making lentil salad one of these days, shouldn’t I? Maybe I will look up a recipe. File this under grand ideas and plans that won’t happen.
If you still haven’t tried mashed chickpeas with avocado, please tell me what you are waiting for? Not only is it easy and quick to make, but it’s also so super delicious…and healthy too. My son even loves it and allows me to make it for him. This means you will like it too.
Seriously though, when I am looking for a quick lunch and don’t want a big salad bowl, my go-to lunch is mashed chickpeas with avocado on toasted cinnamon raisin Ezekiel bread.
The raisin bread adds a whole other level to this combination. Trust me.
I used hummus on the above side salad as a salad dressing because right now I’m not in the mood for regular salad dressings. Hummus works though! I’ve always liked it in place of using traditional salad dressing.
And that’s all I’ve got for today. We aren’t going to discuss the amount of snow we have here because maybe, just maybe, if I don’t acknowledge it, it will go away.
