Pizzas and Salads (plus some thoughts on camp)

 

You know my favorite whole wheat margarita pizza from Mario’s that I eat with a salad, right? Well, this combination actually became my favorite dinner during the summer of 2018. My son was away on his teen tour when I discovered this was my meal and I continue to eat weekly, two years later.

Speaking of teen tours, it breaks my heart to witness the teen tours, college summer programs, sleepaway camps, and day camps be forced to make decisions to cancel sessions for this summer. There are some camps that are open and many parents aren’t even sure what to do.  Should they send their kids? Keep them at home? Run their own backyard day camps by sharing responsibility with other parents, rotating backyards?

We were lucky to not be a part of this decision making for this summer. For the first time since 2007, camp was not on our radar. My son is now older and decided after last summer that he would work this summer. I don’t really know what I would have done if camp was on our calendar. Like, I can say all I want that I would have sent my son because camp is the best and important, but if I were actually in the position, would I really take the chance? I do not know for sure.

It’s weird though to think my son already went through the day camp, sleep away camp, teen tour, college summer program ages…time moves so fast. The whole “live 10 for 2” is such a real, meaningful statement and not just a trending hashtag. I hope next summer is a much better summer for the camp programs and the kids.

It’s nice to put the kid out there to work because he brings me home bagels. He was working over the winter but then stopped because of the virus situation. He started up a little bit again which means more bagels for me.

I am the queen of making pizza bagels but I wish I could eat one without burning the roof of my mouth.

Here’s a pizza bagel that I made using a bialy. I didn’t burn my mouth as much on this one. Also, it’s quite obvious that pizza in any form with a salad is just my favorite combination.

Lunch salad on repeat: Romaine, tomatoes, chickpeas, avocado, feta cheese, corn, and roasted carrots. I switch up my dressing between Trader Joe’s balsamic vinaigrette or the green goddess dressing.

I think this salad did not involve corn, likely because I forgot.

Here’s a variation of the same salad with toasted cinnamon raisin Ezekiel bread topped with mashed chickpeas and avocado. Very exciting meals, I know. However, I will say that the toasted cinnamon raisin bread with mashed chickpeas and avocado (plus a sprinkle of everything but the bagel seasoning) is quite delicious.

I’m in a stop at Dunkin for an iced coffee phase. It’s summer, this happens. Some weeks it happens every day and then some weeks I fall out of the habit and go several days without stopping for iced coffee. I’ve decided it’s okay to have this habit because if it brings me the slightest ounce of joy during this really weird year, then it’s just fine.
