A quick look at what I’ve been eating on rotation lately!
I’m definitely back to my favorite salad to make at home on a daily basis. It’s either my lunch salad or dinner salad on any given day. In case you forget what’s in my favorite basic salad, it’s a mix of lettuce, tomato, chickpeas, avocado, and feta cheese. Sometimes, for variation, I’ll do mashed chickpeas and avocado on toast alongside a basic salad with feta cheese. So really, same ingredients served a different way.
This particular salad used Trader Joe’s organic butter lettuce blend in place of romaine because I was out of romaine lettuce at the time of making this salad for lunch the other day. My son is obsessed with the butter lettuce blend from Trader Joe’s — anyone else?
I added Trader Joe’s balsamic vinaigrette plus a shake of Trader Joe’s everything but the bagel seasoning.
Here’s another great salad I’ve added to my salad rotation lately! In this mix are romaine and butter lettuce with chickpeas, avocado, roasted baby potatoes, and Trader Joe’s organic green vegetable foursome blend. There would have been tomatoes in this salad had I not run out of them!
Side note: I season the baby potatoes with everything but the bagel seasoning AND Trader Joe’s Onion Salt. I love cooking with the Onion Salt!
I really liked my salad from Chopt this week. Slightly different mix than usual as I chose spinach, romaine, sweet potatoes, quinoa, avocado, beets, and hearts of palm with the Mexican goddess dressing on the side.
No one is shocked I’m sure, to see my favorite slice of whole wheat Margarita pizza. I believe I had my favorite pizza two days in a row this week! Summer is definitely my time of year for having pizza for dinner a few nights a week in place of making dinner at home.
