Lots of recent meals to discuss! Let’s get started with some salads first.
I told you the vegan cobb salad was becoming my favorite at The Cheesecake Factory. While I almost ordered my original favorite barbecue ranch salad, I ultimately went with the vegan cobb again, instead. It really is so good!
Here’s my most recent salad from Town Bagel. Shoot, what was in it? I think it was romaine, corn, chickpeas, roasted red peppers, cucumber, tomatoes, and avocado.
I worked from Panera a couple of times over the last week which is more than I have in a long time. While I do love to get my work done from Panera (because I can really focus and get so much accomplished in a short amount of time) I can’t always set myself up there like I used to do in the past. Between Skype calls, webinar sessions, and zoom meetings, I can only get to Panera when I have nothing scheduled. I mean, there are people sitting in Panera having loud facetime conversations and conference calls, but I think that’s rude, inappropriate and most certainly, not professional.
Okay, anyway. I enjoyed my Panera salad a few times as of late. I call it my Panera salad because it’s technically not on the menu — I customize the salad the way I want it.
This is the full sized seasonal greens with the addition of hummus and avocado.
My Panera salad order is fairly basic but what I add combines well to make it super tasty. Sometimes I add feta cheese too as I did in the below salad.
We went for sushi over the weekend. It had been a while since I last had sushi which is weird as I used to have sushi all the time.
Started with the shumai (and a salad with the ginger dressing).
There were actually two plates of sushi but I only got a picture of this one. The other plate was three different types of veggie rolls.
The Islanders are now back to playing in Brooklyn for the rest of their home playoff games. No one is happy about it but at least they have squares slices of margarita pizza added to the menu. I had this corner margarita slice at the game on Sunday.
Plus, I had a bag of popcorn because I felt like I needed it.
As for meals at home, I am still way simple with what I am eating and preferring salads. The other night, I attempted to eat roasted brussels sprouts again. I think I recently mentioned that I find brussels sprouts pretty hard to digest these days, most likely because I do not eat them as often as I used to in the past.
I bought the roasted brussels sprouts from Uncle Guiseppes because they looked so good. I even cut them up really small into my salad thinking that would make it easier to digest. No such luck. I had that awful digestion feeling for about two hours after eating. Frozen brussels sprouts definitely work much better for me but obviously, those don’t compare to the flavor of roasted brussels sprouts.
Also, I keep thinking I will try making these veggie sheet pan dinner. I live on chickpeas so why not throw them together on a pan with asparagus and potatoes? Plus, this is a recipe and will make me feel as though I cooked myself something. 🙂
What have you been eating lately?
Just curious, have you ever tried roasting frozen brussels sprouts? I roast frozen broccoli all the time and it’s one of the best cooking shortcuts that I know. I haven’t yet tried to roast any other frozen veggies but it’s only a matter of time.

I love to roast frozen vegetables! While I don’t find the frozen brussels sprouts to come out as good as fresh, broccoli and other frozen vegetables do. Here’s my post on it in case you are interested
I love roasted brussel sprouts too, but I don’t have them that often. I used to switch take probiotics and am switching back to that because it does help with my digestion of some foods.
With the exception of the sushi (I’m weird), I’d like to eat everything you eat. I’ll be over for the sheet pan veggies too.
