Figured I would highlight a few recent meals today!
Let’s start with my salad at Chopt. Pretty typical combination for me:
- Romaine
- Spinach
- Quinoa
- Avocado
- Spicy Peppers
- Beets
- Roasted Brussels Sprouts
- Lemon Tahini
I had lunch at The Little Beet while shopping at the mall. My usual choice of the veggie plate, with the following combo:
- Roasted Broccoli
- Lentils and Beets
- Shaved Brussels Sprouts
- Avocado Bean Dip on top
We still pick La Piazza for grandma pizza and salad when we have dinner at my parents’ house. Lately, there’s been a half meatball request which is not my request so I stick to the plain side.

The salad from La Piazza is always so giant that I always have leftovers. And when I say leftovers, I mean enough salad leftover for a full meal the next day. I used my leftover salad from dinner on Sunday for lunch on Monday and added the following to make it even more exciting:
- Plum tomato
- Avocado
- Chickpeas
- Roasted purple sweet potatoes
I think I mentioned recently that although I was off sweet potatoes for almost a year, they are back in full force on an almost daily basis again. Perfect timing I suppose as Spring has arrived (!!) which means I will probably be running slightly more than I have been over the winter. Spring weather means more time outside which usually means more running for me! While I do not expect to average more than 20-25 miles a week, even being at 20 miles on a regular basis is more than what I was likely averaging during the winter months. While some winter weeks were better than others in terms of running, the fresh air of Spring will definitely put me outside and in the mood for more regular miles. Sweet potatoes are always so good for me when it comes to running. They provide so much energy in the form of those complex carbohydrates and I always feel the difference in terms of muscle recovery.

I think sweet potatoes may be making a resurgence in my diet soon also. They’ve sound good recently, I just need to remember to buy them at the store. Those salads look delicious!
Are those the korean/asian sweet potatoes? I freaking LOVE those! For a long time i would bake several of them whole on a sunday and then just reheat and top with some nut butter and salt for a great breakfast :))
