I have a few thoughts to share today in between a few recent meals!
First, if I get one more email alerting me to an extended Black Friday or Cyber Monday sale, I may remove my email inboxes from my phone and computer. It’s way too much at once, to the point where I don’t even read the emails and immediately hit delete. Marketers need to come up with a better plan of attack.
I’m back on a tomato soup kick. At home it’s the Trader Joe’s Low Sodium Tomato & Roasted Red Pepper Soup and the other day for lunch, it was Panera’s tomato soup.
The best tomato soup ever, in my opinion, is at the Nordstrom Cafe. I haven’t had it in forever though.
I had a sore throat earlier this week. This is newsworthy because I swear I don’t get sick and now I have had two colds in like a month! So far I do not have the cold symptom part this week, it’s just my throat hurting for a few days. I’m thinking it’s gone now because I do feel better, but who knows. I’m not used to this! My stellar immune system cannot fail me!
Good thing I’ve been listening and avoiding the romaine lettuce. Instead of romaine, I bought a power chopped veggie mix from Stew Leonard’s to use as my salad base. I think it’s a mix of chopped up carrots, cabbage, broccoli, and maybe kale. I am not really sure.
I added tomatoes, chick peas, feta cheese, and champagne vinaigrette to the salad. No avocado because remember, a few weeks ago I decided avocado was making my stomach queasy? I’m still avoiding it.
I’m trying to cook a little more lately. Nothing fancy, but I did go back to making the simple one pan meal I was making last winter. It’s basically just a mix of whatever vegetables you like (I used broccoli and carrot spirals here) with Italian seasoning, a little tomato paste, a little Trader Joe’s tomato & roasted red pepper soup, and lentils. This time, I used the Trader Joe’s already cooked lentils rather than cooking my own. Add it all to a cast iron pan with some olive oil — it’s really so delicious and versatile since you can customize it however you wish! I add parmesan cheese too.
I don’t know if I’m in the mood to run today. Maybe it’s because I’m getting over being a little sick or maybe it’s the time of year when extra motivation is needed. I don’t know. All I know is that I’m not very good at pushing myself anymore. Or maybe I should rephrase that to say I’m better this year at listening to what my body truly feels like doing. There’s that fine line between needing to push yourself for motivation and not pushing because why bother to make yourself do something you don’t feel like doing, you know?
It’s not like I choose to do completely nothing when I don’t run. I always do something, be it Pure Barre, a walk, or the elliptical. It doesn’t always have to be running and doesn’t always have to be strenuous and sweaty.
