Trader Joe’s Colorful Carrot Coins Are Back!

 

My biggest food excitement recently (aside from our Mother’s Day breakfast) has to be that Trader Joe’s brought back the colorful carrot coins to their frozen section! A very kind reader notified me when she spotted them at Trader Joe’s the other day and I can’t thank her enough! She totally made my day with this information.

I made a special stop at Trader Joe’s as soon as I could after receiving the notification that the colorful carrot coins were in stock. Of course a part of me was nervous that my Trader Joe’s wouldn’t have the colorful carrot coins in stock but they did!

Since then, my big salads have been looking like this! A mix of romaine, cruciferous crunch, the colorful carrot coins, grape tomatoes, chick peas, and avocado. I also add a shake of the everything but the bagel seasoning – it’s so good on salads!

I needed something different to add to my salads as of late and heating up the colorful carrot coins before mixing them with the other ingredients is just perfect.

If the colorful carrot coins could come back, I now wonder if Trader Joe’s ever plans to bring back my onion rings to their frozen section. It’s maddening when good products are suddenly missing from their shelves! And also, that frozen root vegetable blend. I liked that too.

Also! I enjoyed this salad one night when my son requested Moe’s for dinner. As I was eating it, I decided that I really do prefer Moe’s over Chipotle. While Chipotle gives a heavier hand with the guacamole, Moe’s offers me more toppings.

And a typical salad order at Panera. Apparently I eat a lot of salads these days. Do you like Panera’s hummus as much as I do? It’s been a favorite of mine for years. I love it combined with avocado in a salad.

It had been a long time since I had a Synergy Organic Kombucha! I used to grab a bottle all the time while at Whole Foods or even Target but then stopped. I picked one up at Whole Foods yesterday on a whim while shopping and really enjoyed it. Maybe next time I’m in Target (which is like every other day) I will get more as they are a little cheaper there (plus I get 5% off when I shop at Target with my Red Card).

    What dressing do you put on salads when you make them at home? I need to make a TJ’s trip so badly! When I went this year in early December, I was hoping to grab a pack (or 4…) of the peppermint Joe-Joe’s and they didn’t have them!! I was so upset since they are infinitely better than peppermint Oreo’s.

      So for dressing, it really depends. A lot of the times if I use ingredients like the colorful carrot coins which have so much flavor from the seasoning and olive oil, I don’t add a dressing. Other times I use a balsamic dressing (which I get at Trader Joe’s) or straight up balsamic vinegar. it really depends upon the sale ingredients! If you use a lot of flavorful ingredients and include avocado (or hummus even), I don’t find that I need a dressing.

    I crave kombucha when the weather gets warm! Currently my favorite brands are Dr. Brew and Humm Kombucha, both of which are from Oregon.

    Those carrot coins look so good! I like the brand of Kombucha that Costco carries, but I can’t for the life of me think of the brand 😉 My favorite salad lately has been a bagged salad from Costco with added avocado, apple, and chicken. Yummo!
