Let’s back up and look at what I ate on Sunday for today’s What I Ate Wednesday!
Breakfast:
Sunday was a rest day but that doesn’t change my breakfast routine. My body and mind are so used to eating two breakfasts that even if I’m not running, I still have a small bowl of oatmeal early in the morning as I finish my first cup of coffee and then another bowl a couple of hours later.
Here’s my early morning oatmeal bowl which includes oatmeal heated up with frozen blueberries. After taking the picture I added cinnamon and a spoon of peanut butter. Do you know that I NEVER went back to eating fresh blueberries after a bout with a stomach virus almost two years ago now?
I had a similar bowl of oatmeal to the above later in the morning after taking my son where he needed to be.
Lunch:
With my son occupied for the majority of the day, I was a free girl.
Lucky for me, it was a beautiful day here in New York. It was so warm and sunny that we were able to enjoy brunch at Smuggler Jack’s outdoors. I can’t even believe the weather lately!
I actually ordered a vegetable omelette which is SO UNLIKE ME. It sounded good so I went with it over my typical order of a salad. I do not eat a lot of eggs anymore as I’ve noticed over the last few years that a lot of eggs (as in, eggs or egg whites on a daily basis) create horrendous menstrual cramps for me. An egg here and there during the month however does not negatively affect me although it’s ALWAYS on my mind.
Not pictured is the spinach artichoke dip, glass of Riesling and shared brownie sundae. 🙂
Dinner:
I picked up my son in the early evening and came home to make dinner. I’m on a roll right now with making a dinner he actually likes! I know this won’t last long but for now, he will eat and enjoy the taco meat I’ve been making lately using ground beef. Last week I showed you the taco potatoes which I sometimes serve with this easy taco meat. I feel like most people have a taco meat recipe by now? If not, please let me know and I can share it. It’s really easy.
For myself, I’m not really sure what I had? I guess it’s your basic plant-based power bowl concept of roasted vegetables and potatoes with chick peas and avocado.
Dessert:
The usual handfuls of my favorite chocolate chips.

I eat pretty much the same everyday regardless of my exercise. I’m having leftovers for lunch today. My favorite

The omelette looks delicious! I think I only eat different on Sundays which is a rest day. My weekends tend to have some more unhealthy foods, drinks and snacking than the weekdays. I always try to be mindful of what I eat though regardless of wether I run that day or not.
I’d love a taco meat recipe! I basically eat exactly the same foods and about the same amounts on rest days and non-rest days. In fact, I’m often even hungrier on rest days, so I honor that. Lunch today will most likely be some good from the campus farmer’s market 😀

For some reason I like the concept of power bowls more than salads, because I think the more cooked veggies I have the more happy my stomach is; also that brunch spot looks absolutely delicious!

I go through phases with which i prefer but cooked vegetables can sometimes be easier to tolerate.
My breakfasts and lunches are usually similar on rest days, but I definitly notice I’m not as hungry. And sometimes I indluge a bit more on dessert. 🙂 That omelet looks incredible!

On days I work out, I eat breakfast early in the morning but on rest days I find that it’s almost lunch time before I’m hungry! Maybe if my workouts were more intense I’d be just as hungry on rest days 🙂
And i always wake up hungry lol

Today’s lunch is a kale salad with raspberries and raw cashews and rice/quinoa. I’m having some major tummy problems so I’m really trying to eat unprocessed foods for the week to see how that goes.

I eat more on hard workout and long runs days because my appetite is more – but I don’t skimp by any means on rest days. I love a good veggie omelet!

Agreed! The weather here in New York has been insane and on Sunday we were hanging out in Long Beach- enjoying the actual beach! Unbelievable, but I’ll take it! Your oatmeal looked delicious and we have a lot of taco meat, too. Since it’s something the kids will definitely eat I always mix a can of beans in with it- getting that protein in them anyway possible:-) Great eats!

I do eat pretty much the same on my rest days. If its different its only because I usually make Sunday my rest day so we rely more on leftovers and are more likely to cook a big breakfast.
