Jumping right in to a few recent eats today for What I Ate Wednesday. Gosh am I glad it’s Wednesday already!
It’s so rare for me to get a picture of my breakfast these days but I managed my post-run oatmeal for us. This post-run oatmeal is loaded with frozen blueberries, fresh strawberries and peanut butter. I eat this combination every day lately and love every bite.
I like to add Skoop B-Strong to my post-run oatmeal for added protein but I finished the big container and didn’t reorder it. Yes, I am lazy.
Instead, I picked up a packet of Vega Protein & Greens at Target to carry me over until I remember to order more Skoop. I like Vega but it’s not as good as Skoop if you ask me!
And I still like to use the yogurt store spoons for my oatmeal. I don’t know why but I just love them.
Based on the pictures below, my diet has been filled with salads.
I didn’t even realize how much salad I was eating over the last several days until putting this post together!
Leftovers don’t usually happen for me but I actually brought home some of my favorite barbecue ranch salad (no chicken) from The Cheesecake Factory the other night. It made for a great lunch the next day. I just bulked it up with more lettuce.
I made this quick salad for lunch one day. It’s pretty basic but really good. It contains chopped romaine lettuce with roasted sweet potatoes, chickpeas and feta cheese.
Oh I really enjoyed this salad combination for dinner!
I added feta cheese to the cranberry walnut salad I bought from Stew Leonard’s and served it with a side of crispy roasted potatoes. I think salads with roasted potatoes are my favorite weeknight dinners right now!
Here’s a lunch salad at Panera while working and look, it includes an apple this time!
I am very slowly finding myself slowly returning to eating apples which makes me happy. You know they say an apple a day keeps the doctor away? I really don’t want to mess with that so I am making an effort over here to like them again.
I usually cut up the apple they give me at Panera and add it to the salad.
So speaking of apples, I have been trying to enjoy a granny smith apple with peanut butter and chocolate chips again as my evening snack. Sometimes I want it, sometimes I don’t.
Otherwise, I have also been making individual serving versions of my lightened up vegan apple crisp. I like this dessert a whole lot and it’s a great way to get my apples in. 🙂

What have you been loving to eat on repeat lately?
I’ve also been using vega protein powder from target! I was using it in my smoothies until my blender broke. I had an all day meeting yesterday at work and they served Panera for lunch! I was excited to be able to grab the fuji apple chicken salad which is my favorite there.

I need to try adding frozen berries to my oatmeal! I def eat oatmeal and salads on repeat too. They’re just so delicious!

Hmm, I’m a Vega fan but I’m interested to check out Skoop. I can eat a sweet potato every single day and it still makes me happy!

I am thinking we are kindred spirits when it comes to salads–I love putting roasted vegetables on top of salads–and nuts too! Those look delicious to me and so nutrient-dense. YUM.
Everything looks delicious! My favorite plant based protein powder is the chocolate flavored Vega protein and greens. It legitimately makes everything taste like a chocolate milk shake 🙂
The last time I ate lunch at Panera, I had a southwest chicken salad (without the dressing) and it was so good! I eat oatmeal and salads almost daily.

The apple has returned!!
I’m with you on the potato wedges. The kid and I love them and eat them at least once a week, usually twice. Salads I need more of, which will be easy with all the greens coming in my food share (it started last week) and my garden. Getting the kid to eat them with limited teeth might be challenging though.

I don’t like Vega. Anything with that fake sweetener in it makes me so sick! Not literally sick–just totally grossed out. I’m cringing. Have you tried toasted sweet potatoes yet? I saw it on Instagram and it totally works! Slice up a sweet potato lengthwise and slide it into the toaster for 2 or 3 cycles. It’s good, and my kids like it too smothered in butter. I’m not sure why my comments were going to spam. Maybe I said a swear word or something??!

I know what you mean – I only buy vega when I am out of skoop and only use a little bit at a time anyway just so I get some protein somehow! lol
