I thought yesterday was Wednesday which would have made today Thursday but today is actually Wednesday which means yesterday was only Tuesday.
Breakfast:
Explain to me how people wake up and don’t eat breakfast. I will never relate or understand. Not hungry in the morning? You forgot to eat? Not interested in breakfast foods? You don’t have time for breakfast?
What does any of that mean? Clearly we live on different planets.
Anyway.
I am terrible at remembering to take pictures of my pre and post run bowls of oatmeal lately because I am too hungry and busy looking forward to eating. However, my post run bowl of oatmeal this week has looked a lot like one of my old recipes for unbaked baked oatmeal.
If you haven’t tried adding mandarin oranges to your oatmeal, please do it.
Lunch:
I had a craving for a salad from Chopt for lunch the other day but my son wanted pizza.
Most of the time, I am so easy-going about where we will eat but not this time.
This time, I was operating under PMS conditions which means I almost started to cry when my son insisted we go to Woodbury Pizza for lunch.
Seriously. The tears were about to come. But mom, you can get a salad at the pizza place!
I didn’t want pizza, I didn’t want salad from the pizza place and I didn’t want Red Mango which is located in the same shopping center.
I wanted what I wanted which was a salad from Chopt but I didn’t win the lunch battle this time.
So I sucked it up, texted Heather to say I am over here in New York crying over a salad and then proceeded to order a Greek salad at Woodbury Pizza.
Do you see all of those olives? I probably should have said no olives. And they didn’t give me bread. I would have liked a piece of bread!
Do I look like someone who says no to bread? Goodness, I hope not.
Dinner:
Who remembers my quick and easy plant-based stir fry recipe? You know, from back when I shared recipes? This recipe shouldn’t even be a recipe – it’s that easy! And always good.
Dessert:
I really need to replace my evening apple with peanut butter. While I can no longer eat apples with peanut butter because the thought of it makes me cringe (I know, I sound nuts), I have yet to replace my former favorite 6 night a week snack.
Instead, I pick. Usually its chocolate. Then it’s grapes or strawberries and then back to some chocolate. With a spoon of peanut butter. Okay, a few spoons of peanut butter. I don’t know what I am doing anymore at night. I need a new favorite nighttime snack. Help.

Rob doesnt really eat breakfast but Ive been getting him to eat at least after his morning workouts now. He likes breakfast but won’t take the time to make himself anything. So for awhile I was making frittatas over the weekend and he would have those during the week and now we are on to smoothies.

I totally forgot about that unbaked baked oatmeal!!! It’s so delicious and even though it’s great all year round this season with so much fresh fruit makes the selections unlimited for variation. Also, the other night I was out and after dinner a friend gave me a handful of dark chocolate covered peanuts with some strawberries and it was satisfying!!!! I had the same dinner last evening except it had some baby spinach and goat cheese instead of stringbeans and chickpeas. Hope you are doing well!!!
I always forget I like the oranges in my oatmeal until we have them in the house this time of year! so good.
Yummy day of eats! I have never tire mandarin oranges in my oatmeal but I sure will! Im on the fence about olives, sometimes I don’t mind them and sometimes I want nothing to do with them. I never really like them I guess.

I usually need coffee first, and then I force myself to drink water and by then I’m too full to eat. So while I do eat breakfast, it’s usually not for a couple of hours after I wake up!

I can totally understand that! coffee tends to fill me briefly but then I need a little something to eat before I head outside to run. Otherwise I would possibly faint lol
I need breakfast – I’ve never been one of those people who can skip it, even in college or high school. I once had too briny of olives on a pizza and I just can’t stand them anymore. Ryan always eats my olives now.

I’ve never in my life skipped breakfast!!
I eat breakfast but it’s more around brunch time. I was finding that when I rushed to eat while getting the kids off to school I was throwing random stuff in my mouth and not taking the time to “enjoy” my breakfast. So I have started making a lovely coffee with MCT oil and collagen peptides…it holds me over for a bit…then once the kids are gone I may run a few errands and come home to eat breakfast! It’s just made my choices more of what I actually WANT vs…what’s the fastest thing I can throw in my mouth! LOL.
At night–I usually do hershey kisses…..or other bad for you candy….last night was a huge sucker from Walgreens…
you know I love Hershey’s kisses…
My nighttime snack changes all the time, but it usually apple with nut butter (I get sick of it too), cereal, yogurt with granola and fruit, chocolate with peanut butter, or cashew milk snickerdoodle ice-cream (the best!!) by itself or with one of Hummusapien’s flourless zucchini brownies.
Also, when people tell me they don’t eat breakfast, I am speechless. If I don’t eat breakfast, I am a ranging b**ch for the whole morning, and let alone, I feel really sick. I will never understand haha
Olives are iffy for me. Sometimes, I like them and sometimes I don’t. It depends on the day 🙂

I like to either eat Greek yogurt or Halo Top for an evening snack 🙂
I have a hard time eating breakfast sometimes because I run before work and I leave my house at 7am to get to work and most times I don’t really feel hungry/want to eat until about 8:30 or 9 and unless I want to eat while I am teaching (some days I do) then I wait until my lunch hour at 10:45, which is basically breakfast 😉

I remember back when I shared recipes too. Ha, actually I have two I need to share now and I still can’t bring myself to sit down and type up the post. Oh well.
