I have a bunch of recent eats to share with you today!
First, I made a KILLER salad on Monday.
My friend Dina and I worked together which we really try to do every Monday but hadn’t in a while so it was really nice again for a change.
I always make us lunch and we think this salad was the best ever. The key to this simple yet incredible salad was roasting the sweet potatoes in the new Trader Joe’s Everything But The Bagel Sesame Seasoning Blend.
I added the roasted sweet potatoes to a giant garden salad of chopped lettuce, tomatoes, cucumbers, onion, chickpeas and avocado.
And confession! I’ve been buying a giant garden salad pre-made from Stew Leonard’s! I get at least four good servings from the bowl so I find it to be worth the $9.99 price tag.
All I do is doctor it up based upon what I feel like adding in the moment. My go-to additions lately are the roasted sweet potatoes, a can of organic chick peas and avocado.
I’m back on a salad kick I guess because I also had a salad from Maoz over the weekend.
Who remembers when Maoz was my favorite city destination?
They opened a Maoz near me a few years ago but it’s not as good as the city locations since the city locations have the toppings bar where I can serve myself <- serve myself means I make a larger than life salad filled over the brim with toppings.
I stand by my claim that Maoz has the best roasted broccoli in the world. And that’s hummus you see on the side of this relatively small salad.
In case you are interested, here’s a flashback WIAW link which includes a BIG Maoz salad from a city location. You will see immediately just how much bigger those Maoz salad bowls are!
Here’s a really quick weeknight dinner. On the bottom of the plate is mashed chickpeas and avocado which was sprinkled with the Everything But The Bagel Sesame Seasoning Blend before mixing. I then piled the plate with roasted potatoes (both sweet potatoes and regular potatoes), roasted broccoli and sugar snap peas. Who else loves sugar snap peas?
Desserts:
First Ralph’s Ices of the season! I always order the candy bar fudge (formerly known as Snickers fudge) but also wanted the rainbow cookie so I had a scoop of each.
I was in Huntington Village briefly Saturday night so of course I needed Ben & Jerry’s. Vegan PB & Cookies again with hot fudge on top. It seems to be my standard order these days.
So I was asked on Instagram to do a post on various ways to use the new Everything But The Bagel Sesame Seasoning Blend from Trader Joe’s. Even though I just shared two different ways I like to use it (on roasted potatoes and in mashed chickpeas/avocado) and also mentioned using it in Monday’s food shopping post, I am more than happy to put together a post on the subject. It may take me a little time since I want to try out some other ways to use it but it’s on my radar to address the topic!

What are your go-to easy salad ingredients lately?
Are there any topics you want me to cover in an upcoming post?
I love added roasted potatoes to my salads. I don’t add alot of filling foods to my salads when I make them at home to bring to work but the potatoes really add a nice flavor and help to fill me up!

Lately I’ve been loving the “simple” salads recently. Lettuce, parm, pine nuts, avocado, and a homemade vinaigrette! Sweet potatoes on salads in one of my fav toppings! I bet the TJs seasoning made it that much better!

I love roasted potatoes of any type on my salads. My go-to salad has been kale with feta, tahini, a hard-boiled egg, and roasted sweet potatoes and bell peppers. So good!

I love sugar snap peas, but I have never thought to roast them! I need to try that!

My go to salad ingredients are probably some nuts, carrots, and lettuce and cheese and dressing. I love how you find amazing giant salads, and you enjoy delicious ice cream too. You’re a girl after my own heart.

Great post! The sweet potatoes with this seasoning sound amazing- I’m going to try it ASAP. Last week I was in Texas and we had some insanely amazing mediterranean food from a place called Fadi’s- during that meal I was trying to explain the salad bar at Maoz and how it’s incredible! The beets are my favorite. Must go there soon! Great post!
Since it’s spring, I have been in love with spinach, chicken breast, strawberries, walnuts, and goat cheese salad. I could probably eat it every single day 🙂

I totally cheat on salads sometimes. Like yesterday I was at Whole Foods and I knew I had spinach to use up for a salad before it went bad. I got all the salad toppings (sometimes things I would not take the time to chop up myself—ie: beets) and it was so so good. Plus it looked like I made it since i put in my own bowl:))
Love all your posts….just keep em coming!
That salad does look amazing! my favorite salad add in is my roasted kabocha! I like to add chopped dates as well and egg whites.
