I burned a pot of oatmeal yesterday. Please don’t ask me how I managed to burn the oatmeal. I was sitting in the kitchen the entire time the oatmeal was cooking on the stove! I guess that I didn’t pay attention to my ratio of oats to water, not that I ever really do. All I know is that burned oatmeal is NOT good. I had to throw it all out and start over!
Breakfast:
I walked over to the gym in the snow/ice/sleet blizzard of a storm and then came home for some oatmeal in a jar. School was closed so it was nice to do things on a later schedule. Lately I find myself unable to get out of bed as easily as I used to!
When was the last time I used an almost empty peanut butter jar for my oatmeal? I can’t even remember.
Lunch:
I really wasn’t hungry for lunch which happens to me sometimes. Peanut butter and jelly with banana on toasted cinnamon raisin Ezekiel bread is always good though.
Dinner:
Roasted broccoli, sweet potatoes, leftover brown rice and chick peas became dinner topped with parmesan cheese. I don’t make meals like this as often as I used to but I really should. It’s so easy and a great way to eat your vegetables.
Dessert:
I really like handfuls of chocolate chips as a snack. 🙂

What’s for lunch today?
I’m OBSESSED with that Valencia pb from Trader Joes! I brought the jar with me to work today and plan on lathering it all over an apple for a snack. For lunch today I have some trail mix and a to-go salad from TJs. It’s one of those lunches I can’t wait to eat!

I just went to TJ and they were out of it! I had to buy the creamy.
We only got a couple inches of snow but its the ice that is causing us real problems! Its sooo cold today. Todays lunch is leftover chili, which Im getting tired of because its what I have had for lunch the past 2 days!

I am in a weird phase of lunches again with cheese and hummus either on a sandwich or on a salad. Yesterday I had a quinoa bowl for lunch, which had been my go-to for weeks but then I got bored of it. I never burn out on oats for breakfast or my usual dinners, but for some reason I need variety at lunch.

Your above response to Laura is so timely to how I am feeling. Sooooo bored with everything I eat. Like u I love vegetarian pizza and nothing seems appealing or appetizing–I am just plain bored. I go to Whole Foods and Traders and just can’t seem to find anything that doesn’t seem like the same old same old. If u come up with something let us know. I need some new meals!!!!
we are always on the same page! I am doing the same thing these days – I walk the stores and see nothing at all that interests me. in fact, grocery shopping doesn’t interest me at all lately either! I could live on a slice of the vegetable pizza every night I think. I don’t care to cook and I don’t crave anything! it’s terrible. I will let you know if I come up with anything though!
No more snow for us, thank goodness! I have burned a pot of oatmeal before and had to throw out the pot. 🙁

Cover the bottom of your pot with gravel, (small rocks) and just cover with some hot water and swirl them around for a while. This was a cool trick my MIL taught me as I tended to burn a lot of pots. 🙂

I actually really love burnt oatmeal and burn it on purpose! We got snow yesterday but not as much as they were predicting! It was icy though.

yummy yummy I love chocolates. about lunch, Peanut Butter Banana Toast is always a good choice. Nutella is a great alternative.
