I don’t have a traditional What I Ate Wednesday post today but I do have a collection of recent eats from lunch, dinner and dessert to share!

Peanut Butter Toast

All I want for the last several days is peanut butter toast! I love it really simple, just toasted cinnamon raisin Ezekiel bread with peanut butter and banana.

Sometimes I toast one slice at a time and have each slice an hour or two apart during the day while working.

I like eating this way when I am not overly hungry.

Pizza

When I am not ordering a slice of whole wheat vegetable pizza, my second favorite pizza to order is definitely grandma pizza. The corner slices are mine!

Salads

Lots of salads lately!

I made this big salad the other night for dinner.

In the mix:

  • Chopped romaine
  • Roasted sweet potatoes
  • Roasted cauliflower
  • Chick peas
  • Roasted pearl tomatoes
  • Avocado

I had this greek salad one night too. Too much feta cheese for my liking especially in ratio to the lettuce but it was still good.

How many times can I share a picture of my favorite salad from The Cheesecake Factory?! I almost didn’t take the picture the other night but the onion strings looked so nice.

Chocolate

It’s worth mentioning my slice of Linda’s Fudge Cake again from the weekend because pouring hot fudge on top of the cake was just beyond genius. And delicious too.

Stew Leonard’s makes these chocolate drizzled rice cakes fresh in their bakery. They are pretty good considering I don’t even like to eat rice cakes as I typically find them tasteless and boring.

Chocolates at night will always be a favorite snack of mine. I am still not interested in eating apples (I know, can you believe it?) but handfuls of chocolate chips will never lose their appeal.

    I am still all about the dark chocolate at night- not sure if I will ever get tired of that! And I haven’t had grandma style pizza since i lived in NY but I would also go for the corner slices!

    Gosh I love Cheesecake Factory’s salads! I haven’t been there in forever but your photos of that salad make me want to go asap. I go through waves of preferring different nut butters in my oatmeal and right now I have no interest in adding peanut butter whatsoever. I’m all about the cashew butter and the new mixed nut butter from trader joes

    Those salads look so good! I don’t think dark chocolate could ever lose its appeal to me. Roasted veggie salads have been a favorite of mine lately as well!

    I think apples will ALWAYS be part of my after dinner snack. The large Fuji ones right now are incredible!!!

    I used to eat WF dark choc covered cashews EVERY night but I havent wanted them in a long time. Same with japanese sweet potatoes, havent want them and literally would have one every single day!!

    My current obsession is dry cereal! My favs are Quaker Oatmeal squares, Frosted shredded wheat, Nature Valley oat bites and Barbaras baked oat squares! I mix them up and slowly eat them in the evening. Funny how our cravings change. Still no potatoes or chocolate for me.

    holy cow that pizza looks so good! I haven’t had good pizza since my last night in the USA in January 🙁 I miss pizza the most, haha! That cake looks insane, I tried your salad at the CF and loved it so now I’ll have to try the cake next time too!
    I’m a little nervous to be moving into March because my student loan repayments start to be due in June ! eeeeeK
