Lots of good comments on yesterday’s quirky eating habits post. I am still working on responding but hope to reply today!
What I really need to do is pick a different day for What I Ate Wednesday because lately I am always doing Monday meals.
Although, I eat the same breakfast every day and only rotate a few lunches and dinners during the week so I guess it really doesn’t matter.
The one thing I will say is that I have been eating more sweet potatoes and vegetables again on a regular basis. At first I was trying to get back to my “normal” because I knew the sweet potatoes and vegetables were good for my muscles and my running and stuff like that. But then, after a few days, it’s what I was craving just like my usual eating habits of the last few years. I was happy about this for sure as it was getting tiring to not want anything that I usually liked to eat! I am still off apples though, I just can’t even look at the granny smith apples.
Breakfast:
Same old breakfast going on here. Pre-run oatmeal early in the morning with some banana before I run and then another bowl like this with frozen blueberries after I run. I mixed up the oatmeal with peanut butter after taking the picture.
Lunch:
My friend Dina was over for our routine Monday work from home day together. We call ourselves the Long Island satellite to the city office.
I made our typical big salad for lunch but added roasted cauliflower to our usual mix. It was SO GOOD.
In the mix:
- Chopped romaine
- Roasted pearl tomatoes
- Roasted sweet potatoes
- Roasted cauliflower
- Chick peas
- Avocado
We have been enjoying just a drizzle of balsamic vinegar but I also added Sriracha to mine because I like things spicy lately.
I drank a lot of Yogi Tea throughout the day and we had some watermelon too.
Dinner:
When we have leftover salad, I end up using some of it for my dinner. I am very big on Dr. Praeger’s veggie burgers right now. I always have them in the freezer but I definitely go through phases of eating them a lot and then not eating them at all.
This salad contained brown rice because I had some left in the refrigerator to use.
I also added avocado to the salad and some of the five layer dip that we had in the house from the Super Bowl.
Dessert:
Insert something boring here. I just picked around at things because I didn’t know what I wanted. Some popcorn, some crumbs from the cookie cake left from the Super Bowl. I don’t even know.

Its 67 degrees here right now but they are calling for snow tonight. Ill believe it when I see it! I bet it will just be alot of rain.

Ive been using a balsamic vinaigrette by Annie’s which as been a nice change because I used to just use olive oil every day.

they keep upping the snow amounts for tomorrow! ugh. I know school will be closed – it almost sounds like maybe it will be closed Friday too.

I am back to eating sweet potatoes again also. My favorite dressing right now is tahini thinned out with lemon and water. I hope you don’t get snow!

I got hit with my first stomach virus since 3rd grade the last 24 hours, and..wow.. I can totally see how something like that can change you to a vegetarian or put you off apples. Everything I usually eat sounds terrible right about now, especially vegetables, peanut butter, and sweets..yuck!
omg I TOTALLLY UNDERSTAND. you know I do! I hope you feel better soon! eat the easy foods (like bread, bagels, pasta, pretzels etc.) until you feel better. no rush on getting back to “normal” eating!
We haven’t gotten snow in a few weeks, but I’m kind of craving snow now. Is that odd? WE’re hoping to do a bit of snowboarding tomorrow in the mountains though, because they’ve had quite a bit of now.
Oatmeal is a really good pre-run snack because it’s so easy on the stomach. I love how you have a couple bowls before and after your run.

We got our huge dump of snow–now it’s warming up, thank goodness! Your dessert that night is like my dessert too! A handful of chocolate chips, the rest of Callum’s cookie, I don’t even remember! Oh well!

It’s so warm here, but might snow tonight. This winter really has been up and down. Then it’ll be warm this weekend so I’m debating if we should get out the grill that I miss so much!

LOL, it hasn’t snowed where I live (SoCal) since 1999, so no snow but we are getting a bit of rain, which is great!
Last night I added dried apple chips and almonds to my salad and it was delish! I am also obsessed with Bolthouse Farms Greek yogurt dressing and I can’t stop using the cilantro avocado. It’s amazing.

Your lunch salad looks amazing! Sriracha and balsamic reductions are my go-to drizzles too. 🙂

The snow hit us so bad here in CT, its 1pm and the snow is still going strong! Lately I have been doing sour cream or Olive Garden dressing for salads. I dont know what it is about rice and sour cream but I have been loving the combo lately!

yeah, it was pretty bad here too! I don’t think it stopped snowing until about 4:00 pm. so much snow out there!
