It’s February, it’s February!! If only today were Saturday too, right?
Since it’s only Wednesday, let’s take a look at what I ate on Monday…
Breakfast:
I’m still eating oatmeal before and after I run.
Here’s an early morning picture of my pre-run oatmeal, mixed with banana and cinnamon plus a side of coffee.
The post-run bowl looks fairly similar only it includes frozen blueberries, peanut butter and a little bit of Skoop B-Strong.
I’ve been adding PB2 to my oatmeal lately by the way. I go through phases with PB2. Sometimes I can’t stand it and then sometimes, like right now, I really like it in my oatmeal.
It’s a little lighter in my stomach and the texture combination works really well when mixed into the oatmeal. I mix the PB2 with water first and then stir it into the oatmeal. I still eat regular peanut butter but in my oatmeal but it really depends on my mood each morning.
Lunch:
As you may already know, my friend Dina and I like to work together on Monday’s so she came over to my house in the morning.
We drank a lot of tea while working. I am happy to report that I was able to score a few boxes of my favorite Cinnamon Vanilla Yogi Tea again!
I made us a nice, big salad for lunch. When I have someone else to feed, I tend to make a nicer meal.
In the salad:
chopped romaine
roasted sweet potatoes
roasted grape tomatoes
avocado
chick peas
balsamic vinegar
This is my favorite salad combination lately. The salad doesn’t involve a lot of ingredients, doesn’t take much time to prepare, and has plant-based protein, fat, complex carbs and flavor!
Dinner:
I am trying to get back to my easy dinner of roasted pepper and tomato soup plus side of roasted potato wedges with melted mozzarella cheese. When I say I am trying, I mean that this dinner combo of mine which had become a favorite sort of fell off of my list after my last stomach virus.
It’s not that I don’t love the crispy roasted potato wedges, it’s just the combo I think. Or maybe the soup which is why it’s not pictured.
I don’t know, you know I get nutty after those stomach viruses but I am trying really hard to eat as normal for me as possible. If you missed my post on how disordered eating can start, check it out here!
Dessert:
Still not normal for me is the fact that I don’t care if I ever have another apple ever again! It’s easily been well over a month since I last had an apple. Wow, right?
I am busy eating Hershey’s Kisses instead.

I love all types of Salads! As far as PB, I pretty much love all the natural ones. I am not a runner and this morning it is the same as always…Protein Coffee.

Ive actually never tried PB2. Its crazy how much your stomach viruses change what you like eat! I actually think your soup and potato wedge dinner sounds really good!

It depends on my mood, but sometimes I do like to use PB2. For the main part I stick with Crazy Richards though. But woah.. that is a crazy long time for you to not eat an apple!
I occasionally like adding PB2 to my smoothies with a banana. I like how it thickens them. And you reminded me I haven’t done roasted sweet potatoes on a salad in awhile and that needs to change!

Soup and potato wedges with cheese is such a good meal! I have never tried PB2- the powdery texture seems weird to me. Breakfast today is oatmeal as usual!

it’s a great meal! I am trying to love the soup part again lol…. once you mix the pb2, it’s a great consistency, especially then mixed into oatmeal
I’ve had a container of PB2 for a while now..it might be time to get rid of it. Not sure what the shelf life is like on them, but it’s got to be 3? 4? years old at this point…yikes.

I totally go through phases with PB2 as well..Like now–it’s OFF! I love all the PB you introduced me too….Crunch Time, Trader Joes and now I am kind of also loving Pic’s Peanut Butter..first found in Hawaii and now on Amazon!!

Hmm… I haven’t really found a PB2 that I like; I still really like regular PB better; I’m really loving Nut Butter Nation Brown Sugar PB lately; however I’m thinking of getting some powdered PB from one of my favorite nut butter companies in Georgia called Georgia Grinders?

I really like pb2 and I just tried Justin’s chocolate almond butter and it was amazing! For some reason, I don’t like Nutella, but Justin’s hit the spot.
I don’t do a pre-run meal (running crazy early) but my post-run meal really depends on the weather. If it’s cold (like today – 41) I prefer oatmeal with Vega protein and greens or scrambled egg whites with spinach but when it’s hot, I like smoothies.
Today was oatmeal with vanilla Vega. I add extra water to it, so that it’s not super thick with the protein powder and it’s pretty yummy!

I haven’t made oatmeal in SO long! It never really gets very cold in San Diego, so I guess I just don’t crave it as much? I do love ti though! I used to put straight up peanut flour in mine, whith a bit of pumpkin puree, cinnamon, and stevia.

I’ve never tried PB2. I love jif..all I eat. Pre run is always a handful of granola, post run is peanut butter toast/English muffin, banana, and berries. I’m sooo routine about breakfast. Never change it!
Had to tell you that I went to a different than usual coldstone location today, and NO COOKIE DOUGH. I was visibily upset.
wow, really?! maybe there was a weird recall for cookie dough at the cold stone locations? I’m so curious now!!
Your salad looks similar to my favorite salad. Butter lettuce, roasted kabocha, avocado, hard boiled eggs, cucumber topped with fruity balsamic. Im loving justins honey almond butter at the moment but I do like pb2.
