Let’s take a quick look at what I ate yesterday!
Breakfast:
I was up early, making my first cup of coffee while preparing oatmeal.
I typically cook four servings of oatmeal at a time which means I only have to prepare oatmeal a couple of times a week, sometimes more often depending on if my son has a bowl for breakfast or if I eat another bowl for lunch.
Lots of oatmeal containers on the counter because two were just about empty so it was time to open the new ones – – I certainly go through these fairly quickly with the amount of oatmeal I eat!
Before heading out for my run, I had my typical pre-run meal of half a banana mashed into a small amount of oatmeal.
Who remembers when I said that my taste buds changed, deciding to hate the chia and flax-seed peanut butter from Trader Joe’s?
Well I suddenly like it again as if I never hated it. Isn’t it funny how that happens?
I usually save the almost empty peanut butter jars for my post-long run breakfasts but felt like using it after yesterday’s run.
Cold oatmeal mixed with berries, Skoop B-Strong, almond milk, cinnamon and peanut butter.
I got my son off to camp and headed to Panera to work for a few hours until I was hungry for lunch.
Lunch:
I really didn’t know what I wanted for lunch which as you know, is a fairly common problem I encounter.
I ended up back at home roasting some Japanese sweet potatoes, broccoli and brussels sprouts. Then I made an omelette with tomato and onion which actually turned into more of a scramble.
I guess this lunch hit the spot. I don’t know. It was very good, just maybe not what I wanted? But I didn’t know what I wanted so pointless conversation!

I buy these purple grapes for my son but I always end up snacking on them which definitely happened later in the afternoon yesterday. We had plans to go out for dinner a little later than I normally eat so I was getting hungry.
My stomach and appetite are like clockwork and both get real angry when I mess with normal meal times.
Snacks really don’t do the trick even though I start out thinking that they will. I ended up eating these grapes plus picking around at other foods in my kitchen.
I really should have made a small dinner before going out for dinner.
Dinner:
I took my son and his friend out for dinner to The Main Event.
I had my usual order of a greek salad with a baked potato plus a handful of my son’s onion rings. I don’t think we have been to The Main Event in a while…hold on checking my blog posts for the last time we were here — okay found it — we were last at The Main Event back in March. Ha, this is why I love having a blog.
The boys didn’t want dessert and I didn’t care either way. I did have an apple quick with some peanut butter when we got home while yelling at the boys to stop all of the racket coming from my son’s room. They went from playing street hockey outside to playing NHL something on the Play Station and it can get a bit rowdy.
I will miss the noise next week when my son is at camp though. I know I will.

Onion rings or French fries?
Last night I made the veggie burgers you and Laura posted about! They took me SO long to make though! I got home from work at 5:45 and it was after 7:30 when we sat down to eat- way too late for us. But Rob actually liked them and said he would have them again just not on a weekday (or I could prep them in advance).

I definitely go with french fries over onion rings!

really that long? I am surprised. you can def make the quinoa and sweet potatoes in advance – how do you bake your potatoes? cut down the cook time by microwaving first for a few minutes and then baking. It definitely didn’t take me that long to make them but they were really good, I am glad Rob liked them! we have another recipe coming Friday that should be shorter to make, I am trying it out today!
Bahah i love being able to use the blog as a way to see when I last did something – I do it all the time! Your dinner looks so, so good. But I’m with you, it’s so frustrating when you make something good and you’re eating it like.. yeaup this is not what I want to be eating.

I never know what to eat when I’m going out to dinner later, so it’s always different based on what’s around. I have to prep my brain more than my stomach if dinner’s going to be later! And the noise, yes. It can be terrible but I know I’d miss it if even one of the kids was out for a night!

Super late dinners always throw me off and I usually end up having to do a pretty substantial amount of snacking before I eat, although lately I’ve been better about being able to go longer stretches until I eat… which I’m thinking the bigger meals are responsible for. And last night I had soup and a sandwich for dinner. Super simple, but I wasn’t feeling much else.

Ryan and I usually eat a bit later in the evening – 7 pm or so – so I always snack on yogurt or fruit with peanut butter in the afternoon.

Fries over onion rings for me. Back when I was younger I used to eat the onion and leave the fried batter.

That’s what I’ve always done too! It’s so satisfying to pull out the entire onion without breaking it.

I had ground chicken, green beans, broccoli, spinach stir fry! All protein and veggies so I was ready for my night time snack of dark chocolate almonds and HUGE fuji apple slices. 🙂

It is amazing how I miss noise too when my family is gone. We are already kind of quiet, but when it’s just me or a couple of us at the house, the house is SO QUIET.
Now I’m craving grapes after reading this and roasted sweet potatoes.

grapes and sweet potatoes are some of my faves.
For a later dinner sometimes I have turkey/ham and cheese slices, apple, carrots, anything with PB…I’m like you, I eat a lot more early in the day and if dinner is later I often snack a lot first and don’t end up eating as much at the meal!

I am happier to eat more often earlier in the day rather than eat a ton at night! I am hungrier earlier on that skimping till dinner doesn’t work.
I have the hardest time with snacking. Not because I don’t like to snack, but because when I’m hungry, I want a substantial amount of food and end up eating more than a normal meal. My body is like clockwork too. In Baltimore I ate breakfast at 9:00 every day without fail when I got to work, but now I eat my bagel at 7:45 on my way to work and my stomach is growling if I wait much longer. And you know I have the hardest time with lunch foods. I’ve switched my TJ’s salads for dinner to lunch and now I’m having a hard time figuring out what to eat at night!

ugh, that is a tough one! I would be stuck too come dinner time. maybe another potato loaded with vegetables and cheese? I like that.
Omg I’m the same way with snacking if I really need a meal. I just keep eating until I might as well have had a meal. Also, I’m really good at eating my body weight in grapes 😀

I am so bad when I have a late dinner because I always OVER snack and then am not hungry. Yesterday I had a super late lunch (not on purpose) and had NO hunger for dinner but was having my father in law over so I just sorta ate some of what I made and did my best to not eat to the point of feeling gross:) I hate going to bed full!!

I am the same way! and I hate eating a meal too close to bed. snacks I can do if I am hungry but not a dinner
Now that summer tomatoes are ripening, I’m all about the Greek and Caprese Salads. I had a fattoush dip the other night for dinner, and it really hit the spot. Gotta love our summer greens (with a side of olives and feta!).
