What I’m Eating This Week

Sometimes I think I can get ahead of myself and plan out these What I Ate Wednesday posts in advance but then I cook something, eat something or see something at the last-minute and we need to talk about it immediately.


What in the heck is this about?!


Nature Valley came out with oatmeal you make using your Keurig machine.

It includes a packet of oats, mix-ins (like nuts and dried fruit) and then the k-cup which I am assuming brews the water in a flavor which probably explains the second ingredient listed = SUGAR.

As a marketing major, I grasp what they are doing here but as a healthy living consumer, this product is just not necessary — be smarter about your ingredients and money/time spent.

Especially when ingredients lists contain the elusive “Natural Flavors” – no one is really sure what that means!

So this looks like a bowl of oatmeal topped with blueberries and strawberries but those aren’t strawberries- they are warmed apples which I guess took on some of the color from the blueberries when I cooked it all in the microwave with egg whites.


I switched my protein source yesterday morning after my run from greek yogurt to egg whites in my oatmeal because I was cold and needed something warm.

See, there is oatmeal in the bowl too.


In other news, I finally remembered to have hot chocolate. Two times!

Aside from my favorite Red Mango parfait on Saturday, lunch has been boring.

I go through phases where I just don’t feel like anything.

Life works better when I have a desire for something specific which I just haven’t in the last few days aside from wanting a hot bowl of oatmeal at every meal.

I had a lettuceless salad the other day though. Is lettuceless a word? It should be.

It means a salad without lettuce because I had none left and didn’t care enough to go to the store to get some.

Cucumbers, plum tomatoes, roasted butternut squash and Brussels sprouts topped with the apple peanut butter pie hummus. It’s so good!

Let’s talk about dinner from last night.

Tri-Color Quinoa and lentils prepared in vegetable broth with roasted butternut squash, apples and dried cranberries with chicken added for my son.  

The dinner I so happily prepared loaded with fall inspired, fresh and healthy goodness…

And then my happy cooking moment was destroyed as I watched my son pick around his plate in order to only eat the chicken, cranberries and some of the quinoa while questioning why it is that I can’t just make pizza snack roll things like the kids were eating in the commercial on the television.


Imagine if I would have given him the roasted green vegetables and avocado too?

It’s fine though because one day he will appreciate me and it’s also fine because I got to eat his leftovers once he took all of the chicken out.

Last night’s peanut butter cup apple bowl, was arranged in a delicious mess on a plate because, if I want to be honest, all of my bowls are either filled with oatmeal in the refrigerator or waiting in the dishwasher to be washed.

Oh and you know what else I have been enjoying every night right before bed?

Trader Joe's Organic Popping Corn

I have been popping it up as a last-minute right before bed snack which has been a terrific idea.

It’s almost like topping off the glycogen stores for a race only it’s topping over my stores for a good sleep.

    Cool oatmeal concept, but what a shame w/ the ingredient list. What’s worse is that people buying it for the “natural flavors” actually thinks it’s healthy and good to eat.

    That oatmeal – why? Just why? I make my own oatmeal packets too and I can’t see why anyone would do it differently.

    Fun Fact: Popcorn is one of the only foods I can be around and not be tempted in the slightest to eat it. It just doesn’t really get my fancy.

      I don’t care for chips, pretzels and rarely even popcorn but lately my son and I pop our own in a bag and it’s been making me happy at night. Totally plain too – probably has something to do with me not caring for salty foods.

    That oatmeal thing is crazy but Im sure people will buy it…it just seems like such a waste of money!
    This week Ive been craving potatoes which is perfect because I have been eating a million of them!
    I ran 3 miles outside this morning and it was COLD again!

    I’m all about lettuceless (heh) salads – it doesn’t add much other than a bland crunch! I’m also very keen to try this popcorn baggy method – I’ve only ever had pre-popped! Experiment time….

    Usually I love salads and have them for lunch or dinner, but got tired of salads all the time so have not had one in awhile. This week I was craving a salad and had one for dinner last night, delish!!!!!!

    You know I’ve never done the brown bag method for popcorn… I’ve only ever air popped mine in a machine. I will agree that popcorn makes a pretty amazing late night snack, though… Now if only I could move away from my smoothies, which I’ve been eating/drinking up to 3 times a day. I know, I know. I never used to be big on em either, but lately I can’t get enough!

    Lettuce-less salads are actually my favourite! I spent so long just digging around for the “good stuff” that I quit putting it in all together. So now I will only have spinach if it really fits the salad, or in a green smoothie – works for me! 🙂

    Sweet Potatoes are my favorite this time of year, and red mango is amazing too, unfortunately my town took out our red mango and I just haven’t quite made it to the new froyo in town yet. Sad I know, love your blog though enjoy your recipes keep it up! And great advice for the oatmeal, we just bought a keurig today and may have tried those without taking a gander at the ingredients in time!
