I woke up thinking today was Friday. Not surprising since each day this week my mind has been a day ahead. Oh well. It is only Thursday and once again the forecast calls for torrential rain and flooding.
Fun.
I wasn’t planning on running outside this morning anyway since I figured I should be utilizing my membership at Lifetime when I can. I tend to get lost in Lifetime so I need to make sure I go there when I have time to dilly dally myself around.
Anyway, before my run yesterday, I made the boy pancakes.
Not just any pancakes.
The nice people at Kodiak Cakes sent me a free product coupon to try out their pancakes.
Kodiak Cakes are a 100% whole grain pancake and waffle mix – all you need to do is add water. The mix contains no added fat, cholesterol or sugar and most importantly – NO PRESERVATIVES!
Ingredients: 100% whole grain wheat flour, 100% whole grain oat flour, non-fat dry milk, dry honey (honey, wheat starch), leavening (sodium bicarbonate, sodium aluminum phosphate, monocalcium phosphate), egg whites, salt.
I have read many wonderful reviews about Kodiak Cakes on several blogs over the past year and was quite excited to pick a box up at Target the other day. I chose the Whole Wheat Oat and Honey mix.
You truly need to just add water.
While I normally make my pancakes from scratch, I do recall most mixes taking longer for the batter to thicken. I also recall having issues with the directions on other mixes in terms of the ratios for dry ingredients to wet ingredients.
No issues here. Perfect ratio and quick preparation.
Batter poured perfectly, flipped perfectly and cooked quickly.
Pancake perfection. And delicious too.
I have used Trader Joe’s Multigrain Pancake mix in the past.
I think we like Kodiak Cakes much better. Not to mention, the ingredients list for Kodiak Cakes is much better and shorter than Trader Joe’s.
While the calorie counts are almost the same (Kodiak Cakes are 130 calories per serving and Trader Joe’s 150 calories), I am all about ingredients these days. The shorter the list, the better.
When I made the pancakes, I decided I really wanted to make them again for dinner.
But then dinner rolls around and I feel like dinner food, not pancakes.
Does that ever happen to you? Do you ever decide in the morning that you want breakfast for dinner but then change your mind?
Maybe today I will feel like pancakes for dinner. It always sounds like a great idea.
I mean, really, pancakes are a great idea at any time, yes?
Since there are no preservatives, I advise you store your box of Kodiak Cakes in the refrigerator. It retails at Target for $4.99 a box. Sounds steep, yes, but when you are getting high quality food plus 18 servings in a box, it is totally worth the price.
After pancaking and getting the boy on the bus yesterday morning, I headed out for my run.
I wore the Asics again. So far I like them. The only real issue I had during my 5 mile run was thirst.
Extreme thirst.
I have been making a real conscious effort to guzzle even more water than normal but clearly I haven’t been guzzling enough.
I don’t think my tag team watermelon hydration plan is working either.
Speaking of gum, look what I found while shopping for my Kodiak Cakes:
Don’t get too excited – the cupcake looks cute and the idea of Raspberry Vanilla Cupcake gum sounds good – but it isn’t good.
Which is fine since I need to chew less and drink more.
Or I can multitask and chew this Quench gum.
Has anyone ever seen this before? I spotted it in my travels the other day.
A gum that claims to prevent/quench thirst? Seriously?
In my opinion, it is just another gimic. I could be wrong.

Those pancakes sound great! I love the sound of the ingredients list. I’ll have to be on the lookout for those.
I am definitely a gum chewer (though trying to cut back!). Have you tried the Extra Lemon Square flavor that is partially shown in your picture? I REALLY like that one!
Yes I have tried the lemon – it’s ok. Nothing to me is as good as the Strawberry Shortcake flavor was! I switched to Watermelon when they did away with my strawberry.
I love kodiak cakes and totally forgot about them. I also love to plan breakfast for dinner and then totally bail on the plan when it comes to dinner time. I think it just never sounds satisfying enough when dinner time rolls around.

I am trying to give up chewing gum….the dessert extra are my fav….sigh
I feel your pain. I switched from the Strawberry Shortcake when they discontinued it to the Watermelon. I would like to switch to chewing nothing!
Those pancakes look and sound really good, and I know if you’re OK with a food, then I am too! You love your healthy and whole things so I totally trust you! 🙂 I always think I want breakfast for dinner but never follow through with it! Yeah those dessert gums aren’t very good. I made the mistake of getting rootbeer float gum and yeah…not so great! I’m a gum chewer and my favorite is cinnamon. Big red all the way! Those pancakes look and sound delicious. I’ll have to give those a try
Never tried the rootbeer, I had the sherber flavor which wasn’t good. I loved the strawberry shortcake.
