Adidas, Whole Foods, Dinner And Cookies- Two Recipes

You know a  sneaker is that great when you fail to realize just how many days you have run in a row.

It somehow escaped my attention that I ran six, maybe seven days in a row? Basically since I bought these Adidas last Monday, I haven’t stopped running.

In basic terms, these running shoes are super cushiony with amazing flexible support all in a lightweight sneaker.

This pair is an ounce lighter than my usual  – yes a one ounce difference is huge.

I can’t say enough about these sneakers but I am going to stop for now because I have other exciting things to report to you on this fine start to the holiday week.

I made it to Whole Foods over the weekend to pick up the moisturizer and some other necessities.

The Whole Foods food bar counts as a necessity don’t you think?

I think I may need to lay off of beets though. Call me crazy, but every time I eat beets I get light-headed. Beets are known to help lower blood pressure and since my blood pressure is always low (and sometimes too low) I am wondering if this is an issue for me.

I may never know for sure but I have decided to lay off the beets from now on. I am sure I can find something else from the food bar to take the beets’ place in the bowl.

I don’t buy all that much from Whole Foods on a regular basis because most of their stuff is a bit pricey but I did pick up these semi-sweet chocolate chips because they were cheaper than even Trader Joe’s.

I used them yesterday in this recipe for peanut butter chocolate chunk cookies.

I may not celebrate Christmas but all this talk about holiday cooking and baking and cookies inspired me.

You must make these cookies now. Simple list of ingredients – no flour, butter or white sugar necessary. I like short lists of ingredients not only for the ease of preparation but for the cost effectiveness as well.

Make sure you pay attention to the recipe and chill the dough first…makes for perfectly puffy awesome cookies.

While I was in the cooking mood, I made the very wise decision to make Hannah’s recommended recipe for The Happy Herbivore’s Meatloaf Bites.

Kidney beans are mashed to create the “meaty” texture in these meatless meatloaf bites and I promise you- even a meatlover can love these little cuties.

I pretty much followed the recipe but swapped out the oats for quinoa flakes and didn’t measure the spices. I also added Trader Joe’s Carolina Gold BBQ sauce and a drop of soy sauce.

I have a strong feeling these bites will be making a weekly appearance in our house.

So easy and quick to prepare as well as easy to store in the refrigerator and/or freezer for a great leftover.

Did I mention the little boy LOVED THEM?

My plan is to play around with the seasonings and flavors to make them as meatballs later this week. Tomato paste, oregano….I will keep you posted!

I had planned to take the little boy into Manhattan this morning to experience the holiday madness but the forecast calls for a rainy day. Holiday crowds two days before Christmas in the rain? No thank you. On to Plan B.

What’s Plan B? Good question.

    Mmmmm. I just had Whole Foods salad bar for lunch this past week. It was the first time in a long time that I did, and it made me wonder why I don’t do it more often!!

    I love the color of your Adidas shoes. I’m currently running with black and neon Asic’s, but I do need a new pair soon!

      I saw on Instagram that you were at Whole Foods- I kept trying to comment but I don’t think it was letting me! I love the food bar but it is so pricey which is why I don’t do it more often…although I do think it just may be worth it!

    Yay! I’m so glad you tried the meatloaf bites! Aren’t they great? Your addition of BBQ sauce sounds awesome. I’ll definitely have to try that next time.

      Love this recipe. Add the BBQ sauce to the mix and then again on top half way through cooking. So tasty.

      Chilling makes a huge difference. In fact, the people I brought those cookies to actually noticed a major difference in the shape, texture and the placement of the chocolate chips- all from the chill. I am currently making your coconut oatmeal chocolate chip cookies right now! The dough is chilling…

    Can you believe that I’ve never tried one of those flourless nut butter cookie recipes? Going to have to put that on the list of things to do in the new year, I think. And while I didn’t do much baking this weekend, I -did- do some no-baking… and a lot of cooking. I spent most of Sunday in the kitchen helping my mom prep food for our Christmas dinners, and by the time dinner rolled around, all I wanted to eat was a bowl of cereal 😆

      You MUST make flourless cookies – not only are they easy, they are so super tasty. It’s amazing how many cookies don’t need flour at all.
