Would you vote for me for Mother of the Year if I let you have mac and cheese for breakfast?

In order to redeem myself from Sunday night when I was told that nothing I have to offer as a meal is appealing, I randomly asked the little boy if he wanted leftover mac and cheese for breakfast.

I would never want mac and cheese for breakfast. In fact, nothing savory has ever appealed to me for my opening meal.

But the little boy likes savory. He likes eggs and ketchup and what I consider “real food” for breakfast.

I see nothing wrong with the occasional mac and cheese as breakfast. It is basically the same thing as eating let’s say grilled cheese only it is pasta instead of bread and a packet of cheese instead of a slice.

And, even better, I don’t use the blue box. I cut that habit out a long time ago, especially after learning about the questionable ingredients found in Kraft Macaroni and Cheese. Click here for more info on this topic.

We are all about Annie’s Mac, in any variety. The Occasional Breakfast of Champions I tell you.

Hey, as long as you eat some form of a balanced and within reason  morning meal to get your metabolism going, you are a step ahead of most of America.

So I went to Trader Joe’s the other day like I said I would to try to find some new and different things to keep in the house.

While I bought a lot of my usual staples, I picked up a couple of items that I haven’t had in a while including wild frozen shrimp, chocolate chip cookies, lentils, broccoli slaw and kale.

At least I thought I bought kale. I actually grabbed a bag of mixed southern greens. Oops. These greens are good though!

I made the easiest and most delicious shrimp the other night.

We both loved it so much that I quickly made it again to have for lunch yesterday.

I love eating with chop sticks at home.

All I did was throw the shrimp in the pan and add a little bit of each of the above sauces. So simple and quick.

I chopped his shrimp into a brown rice medley and I had the same, only mine was loaded with vegetables that I stir-fried in with the shrimp, topped with avocado.

Since he meets the childhood requirement of NOT consuming vegetables, I tricked him into eating a few hidden inside these egg rolls.

Shrimp may be my new thing to cook at home. I don’t often cook any form of fish but it is just so easy to take out the freezer and cook that it is time to shake things up on the home front.

I know that I am supposed to only eat “wild” shrimp versus “farm-raised” so for a few more dollars, you can easily locate the wild shrimp and rest easy at night knowing you avoided the extra chemicals, toxins, pollutants and whatever else it is we are supposed to avoid eating.

Another benefit to eating shrimp is that it is decent source of protein for me which may help keep me full.

I hate to be hungry, which is why I ensure to eat every few hours. Yesterday my morning snack was this granny smith apple, a dab of crunch time peanut butter topped with blueberries.

If you have yet to have peanut butter and blueberries combined, I insist you try it. Like right now.

And apples, peanut butter and blueberries? The new winning combination.

Don’t you just love when you discover new and easy meals and snacks to eat? It is the little things in life that excite me.

    I love Annie’s mac. I like to add some veggies and protein to them and bake it kind of like a casserole. Great for a night or two before a race 🙂

    That’s a really good idea to add blueberries to your apple slices! That sounds delish!
    Haha I’d NEVER eat mac n cheese for breakfast but you totally win mom of the year for that call! 🙂
    And chopsticks at home are amazing… I did that last night and felt so cool! I love that you’re shouting out to wild caught shrimp – so IMPORTANT because people don’t realize that farm raised seafood is as bad as chicken raised in cages and treated poorly. Ugh. I can’t even get started unless you want a novel in your comments section.

    Mmmm… veggie rolls. with sweet chili sauce. Breakfast… I love tamales and eggs. that might be normal. banger and bbq beans with a side of fruit and a marshmallow whip. now off to read your slam book. 😉

    I’m soooooo happy you bought the wild shrimp as well. The Argentenian Red Shrimp at Trader Joe’s is all I buy! I think it’s the only actually wild shrimp there (or at least at mine), otherwise it’s all farm raised and wild-caught – which is NOT the same as wild. Do not let it fool you. With wild-caught all they have to do is farm raise some shrimp then throw them into “wild” waters and catch them there. By the time they’re actually out there, they’re already grown which, just like free range chicken, means that they don’t know how to feed in the wild. Free range chicken only has to be outside for a few weeks to be considered free range, and that’s usually at the end of their lives. So effing dumb. Anyway, always always buy wild stuff. If I can’t buy wild, I don’t buy it at all. Although, scallops, mussels, clams and the like are fine to buy farm raised. They have their own filtration system that gets rid of the crap they put in the feed. That’s the end of my rant, haha. Sorry. Yay for Annie’s!!

    Haha I hardly ever crave anything savory for breakfast but the other day I just HAD to have a little burrito haha. I don’t know why! So I had a little microwaved breakfast burrito! It was so good and totally hit the spot. Hey, it’s still balanced!
